Enjoy the recipe of a basic cake.
Preparation Time: 10-12 minutes
Cooking Time: 30-35 minutes
Ingredients:
- All-purpose flour (Maida): 1 cup
- Wheat flour: 1/2 cup
- Butter (unsalted): 1/4th cup
- Oil: 1/2 cup
- Condensed milk: 1/2 cup
- Powdered sugar: 1/4th cup
- Milk: 3/4th cup
- Baking powder: 1.5 tsp
- Baking soda: 1/2 tsp
- Salt: 1/2 tsp
- Vanilla essence: 1/2 tsp
- Vinegar: 1 tsp
Method:
- Preheat the oven at 180℃ for 8-10 minutes.
Alternatively, you can take a heavy bottom pan like kadhai/cooker, put some salt in it, then put a small bowl upside down or cooker stand in it. Cover and preheat at low flame for 10 minutes. - Take a 7 inch cake tin, put butter paper in it and grease it with oil.
Alternatively, you can grease the cake tin with oil and then dust it with all-purpose flour. - Take a bowl and put a sieve over it. Add all-purpose flour, wheat flour, baking powder, baking soda and salt. Sift all the ingredients through it. This is our dry mixture, keep it aside.
- Take another big bowl, add butter and oil. Mix them well, then add condensed milk, sugar and vanilla essence to it.
Now, beat the mixture using fork/whisker/electric beater till it gets creamy white. Add milk and mix it, our wet mixture is ready. - Now, take the dry mixture, add it to the wet mixture in two batches. Mix the ingredients by cut and fold method.
- At the end, add vinegar and fold the mixture gently. Our cake batter is ready.
At this stage do not over mix/beat the batter, otherwise your cake will not turn out spongy. - Transfer the batter to the cake tin and tap 4-5 times, so that air bubbles are removed.
- Put the cake tin in the oven and bake it at 180℃ for 30 minutes. If you are using kadhai/cooker, bake it at low flame for 35 minutes.
- After 30-35 minutes, check the cake by pricking it with a toothpick in the center. If it comes out clean, our cake is ready. If it doesn't, then bake for 5 more minutes.
- When the cake is ready, open the door of the oven or remove the lid from the pan and let it cool for 5 minutes in the oven/kadhai/cooker itself.
- Then, take the cake tin out and allow it to cool for 10-15 minutes by placing it on a wired rack or any plate full of holes.
- After 10-15 minutes, unmold the cake and again place it on the wired rack/plate with holes and let it cool completely.
To unmold the cake, take a knife, move it around the edges of the cake tin, then invert the cake tin on the wired rack/plate with holes, remove butter paper (if any) and put the cake upright.
Your super fluffy and spongy cake is ready😄. will post the recipe for icing/frosting soon.
Some Tips:
- Every ingredient should be at room temperature.
- Prepare the cake tin first, then make the batter, as it is not advisable to leave the batter for long.
- Never unmold the cake when it is hot.
- Preheating the oven is a must, overheating should be avoided.
- Do not use cold knife instead of toothpick to check the cake.
