How to make tradional Rajasthani sweet "Laapsi"

Ingredients:
- Broken wheat (daliya), preferably coarse: 1/2 cup
- Clarified butter (desi ghee): 1/4th cup (to roast daliya) + 1tbsp (to roast dry fruits)
- Sugar: 1/4th cup (this is what I used, you can take upto 1/2 cup if you like more sweeter)
- Some dry fruits of your choice (optional)
- Dry coconut (cut into pieces): 10-12 pieces (optional)
- Cardamom powder: 1/4th tsp (optional)
- Saffron (kesar ): 8-10 strands (optional)
- Water: 4 cups (you may need little more or less, depending upon the quality of your daliya)
- Heat a heavy bottom kadhai (preferably iron, as it adds to the flavor), add 1 tbsp ghee to it and roast all the dry fruits in it till golden brown. Take them out and keep aside.
If you are using raisins (kishmish), roast it separately, otherwise it will get burnt. - Now, add the remaining ghee, allow it to heat up. Add kesar and daliya, roast till it turns aromatic.
It takes around 5-7 minutes. - Now, add water and bring it to a boil. Cover and cook for 25-30 minutes at low flame.
Stir it once or twice in between. - Meanwhile, chop all the dry fruits in any shape of your choice.
- After 25-30 minutes, when ghee starts leaving pan, add sugar and mix it well for 2 minutes on high flame.
Do not keep it for longer after adding sugar, otherwise it will turn sticky. - Now, turn the flame off and add all the dry fruits and cardamom powder, mix them and cover and keep for 2 minutes.
It enhances the flavor of cardamom powder. - Transfer to a plate and garnish it with dry fruits. Serve it hot.
