Tutti Frutti Cookies

Enjoy the recipe of homemade tutti frutti cookies.

Preparation Time: 10-12 minutes

Ingredients: 
  1. Wheat flour: 1/4th cup
  2. All-purpose flour (Maida): 1/4th cup
  3. Vanilla custard powder: 2 tbsp
  4. Powdered sugar: 3 tbsp
  5. Butter (unsalted, at room temp.): 2 tbsp
  6. Tutti frutti: 2 tbsp
  7. Cashews (chopped): 5-6
  8. Cardamom powder: 1/4th tsp 
  9. Pineapple essence: 1/4th tsp
  10. Baking powder: 1/4th tsp
  11. Baking Soda: 1/8th tsp (a pinch)
  12. Salt: 1/8th tsp (a pinch)
  13. Milk: 1-1.5 tbsp  
 
Method: 
  1. Take a big bowl, add butter and sugar to it. Beat it till it gets creamy white. You can beat it using fork/whisker/electric beater.
  2. Now take a sieve, keep it over the bowl and add wheat flour, all-purpose flour, custard powder, baking powder, baking soda, cardamom powder, salt and sift all the ingredients through it.
  3. Then add tutti frutti, chopped cashews, pineapple essence and 1 tbsp milk. Bring the dough together, do not knead it. Add 1/2 tbsp of milk if required.
  4. Take out the dough and roll it on a plane surface. Meanwhile, try to give it square shape by pressing it from sides. 
  5. Wrap the dough in a cling wrap/food wrap/polythene and seal it completely. Keep it in refrigerator for 1 hour.
  6. After 1 hour, Take out the dough from the the refrigerator.
  7. Preheat the oven at 170℃ for 10 minutes. Alternatively, you can take a heavy bottom pan like a kadhai or cooker, put some salt in it, cover and preheat at low-medium flame for 10 minutes.
  8. Slice the dough into slightly thick pieces. Take a baking tray/plane dish, put butter paper over it. Place all the cookies in it at slight distance between them. 
  9. Put the baking tray in the oven and bake  at 170℃ for 15 minutes. If you are using kadhai/cooker, then put the plane dish in it and bake for 15 minutes at low-medium flame.
  10. Take out the cookies and cool them down by placing on a wired rack for about 20-30 minutes. This step is very important for crispy cookies.
  11. If you don't have wired rack then you can use any plate/vessel that has holes. Put the cookies in it and cool them down as above. Make sure that the cookies get air from top as well as from bottom.
